8 ounces sliced bamboo shoots
1 tablespoon green curry paste
1 large onion
2 carrots
2 small potatoes
1/4 cup snow peas
12 ounces boneless skinless chicken breast
5 ounces coconut milk

Recipe Directions for Lite Green Chicken Curry

  1. 14 ounce can lite coconut milk (recipe calculated with 5 ounces regular coconut milk-calorie equivalent);suggest serving with brown rice;can add basil leaves for garnish and flavor as desired

  2. Chope vegetables and chicken into bite sized pieces. Combine all ingredients in sauce pan and simmer until chicken is done.
