An easy filling for wraps or pitas, also great by itself or with rice.

Recipe Ingredients for Lite Chicken Stir Fry

1 red pepper, sliced
1 small eggplant, sliced
1 red onion, sliced
1 clove garlic, minced
1 lb. chicken breast, poached, sliced
1/2 c. chicken broth, low sodium
2 oz. black olives, chopped

Recipe Directions for Lite Chicken Stir Fry

Heat pan, add a few tablespoons of broth. Add sliced onions, saute on medium for a few minutes. Add garlic and sliced red pepper, saute until tender. Add chicken (or cook chicken in a separate pan w/ a little broth), continue to saute until chicken is almost cooked through. Add eggplant, salt and pepper, and a dash of low sodium soy sauce, if desired. Add broth as needed to keep food moist/from sticking to pan. Stir well, cover for a few minutes and allow to steam a little. Add olives, stir well. Serve hot!
