Recipe Ingredients for Lite Carrot Cake

1 cup cake flour
1 cup whole wheat flour
1 cup brown sugar
4 tbsp white sugar
1 tsp baking powder
1 tsp baking soda
1 1/2 tsp ground cinnamon
3 eggs
1 cup unsweetened applesauce
2/3 cup lowfat milk
1 1/2 cups carrots, grated
1/2 tsp cloves
1/2 tsp nutmeg

Recipe Directions for Lite Carrot Cake

  1. Preheat oven to 350 degrees. Lightly grease and flour 2 9-inch round cake pans

  2. Separate eggs and beat egg whites until frothy, then continue whipping and gradually add the white sugar. Beat until stiff

  3. In a large bowl, combine cake flour, wheat flour, brown sugar, baking powder, baking soda, and spices, mix until blended. Add applesauce and milk and mix well. Add egg yolks and mix well. Fold in egg whites and carrots. Pour batter into prepared pans.

  4. Bake for 25-35 minutes. Cool and frost with your favorite cream cheese frosting.
