This is a big apple "pancake" that is baked in the oven. Yum!! It is very light and airy. This recipe is actually for 6 smaller servings. But me and my family prefer to split it evenly amongst the three of us. Serve hot with Pancake or Maple Syrup.

Recipe Ingredients for Lite Baked Apple Breakfast

1 Nonstick cooking spray
1/2 cup skim evaporated milk
1/3 cup self-rising flour
2 tablespoons granulated sugar, divided
3 large eggs, separated
1 tablespoons lemon juice
1/4 teaspoon ground cinnamon
1 medium apple, cored, quartered, and cut into thin slices
1 tablespoon sugar, cinnamon mix

Recipe Directions for Lite Baked Apple Breakfast

  1. Preheat oven to 375 degrees. Spray a 10-inch ovenproof skillet with nonstick cooking spray and place in oven for 10 minutes.

  2. Put evaporated milk, flour, 1 tablespoon sugar, egg yolks, orange juice and cinnamon in blender and blend until smooth.

  3. Beat egg whites in large bowl until soft peaks form; gradually add remaining sugar and continue beating until stiff peaks form.

  4. Fold milk mixture into egg whites.

  5. Pour batter into hot skillet. Press apple slices 1/2 inch into batter, peel side up, to form a spoke-like pattern around batter. Sprinkle with cinnamon-sugar. Bake for 10 to 15 minutes or until set.

  6. Serve immediately.
