Only the freshest ingredients should be used for this deliciously simple salad. I recommend a trip to Farmer's Market on Saturday morning and a fresh Salmon Salad for lunch!

Recipe Ingredients for Lis's Salmon Salad

3 cups field greens
10 ounces salmon
1 cup cooked brown rice
1 tsp. extra virgin olive oil
2 tsp. lemon juice
1 tbsp. fresh parsley
10 cherry tomatoes

Recipe Directions for Lis's Salmon Salad

  1. In a small bowl, combine the olive oil, lemon juice and parsley.

  2. Place the salad greens in a large bowl and toss with the lemon juice mixture. Then, arrange the prepared salad greens into a bed on 2 separate plates.

  3. Prepare your salmon in the oven or a pan, with no oil, but season to your liking. I prefer to sprinkle it with lemon pepper seasoning and bake it in the oven.

  4. Place 1/2 cup of rice atop each bed of greens.

  5. Place the salmon on top of the rice.

  6. Cut the cherry tomatoes in half and use as garnish.
