Yummy slow cooked pot roast, great for a VERY cold day!!

Recipe Ingredients for Lisa's Sirloin Tip Roast

2 1/2 lb beef roast (sirloin tip)
2 tsp. dried rosemary
2 tsp. dried thyme
2 tbs. Extra Virgin Olive Oil
1 tbs. Soy Sauce (light)
1 tbs. Cider Vinegar
4 cloves minced garlic
1/2 tsp. pepper
6 medium potatoes
3 onions

Recipe Directions for Lisa's Sirloin Tip Roast

Rub dry ingredients and garlic onto roast, and place in crock pot. Add wet ingredients. Quarter potatoes and add to crock pot. Cook on low 6-7 hours or high 4-5 hours then add quartered onions. Cook 2-3 more hours on low or 1-2 more hours on high.
