Recipe Ingredients for Lisa's Home Style Meatloaf

2 lbs Ground Beef 85% lean
3 large Eggs
1/2 Onion, chopped
1 Carrot, grated
3/4 cup Parmesian Cheese, grated
8 oz Italian Bread Crumbs
1/2 cup Ketchup
1/2 tsp garlic powder
1/4 cup Dried Parsley
1 tsp Paprika
1/2 tsp salt
1 tsp ground black pepper

Recipe Directions for Lisa's Home Style Meatloaf

  1. Heat oven to 350 degrees F.

  2. To a large mixing bowl combine the onion, carrot, garlic, black pepper and paprika.

  3. To the vegetable mixture add the ground beef and the bread crumbs.

  4. Season the meat mixture with the kosher salt. Add the egg and combine thoroughly, but avoid squeezing the meat.

  5. Pack this mixture into a 9-inch loaf pan to mold the shape of the meatloaf. Onto a parchment paper-lined baking sheet, turn the meatloaf out of the pan onto the center of the tray. Insert a temperature probe at a 45 degree angle into the top of the meatloaf. Avoid touching the bottom of the tray with the probe. Set the probe for 165 degrees.

  6. Use ketchup as a glaze on top of the meatloaf.

  7. Remove from the loaf pan, slice into one inch slices and serve.
