Recipe Ingredients for Lisa's Calabacitas

1 medium onion, chopped
1 tsp jalapeno pepper, diced
1/2 cup bell pepper, diced
2 cups diced zucchini
2 cups diced summer squash
1/2 teaspoon salt
1 vegetable oil spray
1/2 cup frozen corn

Recipe Directions for Lisa's Calabacitas

  1. spray wok with vegetable spray

  2. cook onions & bell pepper & jalapenos over medium heat for 4 minutes.

  3. add squash, corn & salt and cover.. cook 3 minutes, stirring occassionally.

  4. enjoy
