Lion's Potstickers Recipe

These are best made using a mandolin to get everything sliced super thin. Make sure you don't let the wrappers dry out. Also, the mushrooms should be shitake, a serrano chili can be minced and added for extra umph.

Recipe Ingredients for Lion's potstickers

30 wrapper, wonton (3-1/2" square) Wonton Wrappers
105 grams Cabbage, Red
0.33 cup, grated Carrots
62 grams Peppers, Sweet, Red
4 medium (4-1/8" long) Onions, Spring Or Scallions
6 medium Mushrooms
3 clove Garlic
20 grams Ginger Root
1 tbsp Oil, Sesame

Recipe Directions for Lion's potstickers

  1. Very thinly slice cabbage and pepper.

  2. Grate carrot and ginger.

  3. Mince garlic, scallions and mushrooms.

  4. Sautée cabbage and pepper (and chili) with 1/2 the sesame oil til wilted.

  5. Transfer to bowl.

  6. Then sautée mushroom, scallions,

  7. garlic, and ginger til tender.

  8. Toss all veggies together with carrots till well combined.

  9. Let cool.

  10. Working quickly (about 4 wrapper a a time) spread wrappers out on clean surface

  11. Fill wrappers with 1 tbsp veggies.

  12. Moisten all four edges with water and press in half to close.

  13. In large sautée pan (heated to med high) sautée until golden brown.

  14. Add 1/2 c water and cover

  15. Steam for 3 minutes.

  16. Uncover and cook until water evaporated. Serve hot with dipping sauce.
