These are basically tortellinis, I call them love letters because I fold them to look like little envelopes... And I always make them for people I love.

Recipe Ingredients for Lions love letter pasta

20 wrapper, wonton (3-1/2" square) Wonton Wrappers
1/2 cup Ricotta, Part Skim Milk Cheese
2 oz Goat, Hard Type Cheese
1 ounce Chevre
2 tbsp Parmesan, Grated Cheese
1 wedge (1.33 oz) Feta Cheese
2 tbsp Rosemary, Fresh
2 tbsp Parsley
3 tbsp chopped Chives
1 dash Pepper, Black

Recipe Directions for Lions love letter pasta

  1. Mince herbs.

  2. Blend well with all cheeses and season with pepper.

  3. Working quickly fill wontons with 1/2-1tbsp of filling.

  4. Fold in half diagonally, fold long corners over, then the flap.

  5. Simmer gently in a large sautée pan with about 2/3 cup of water.

  6. Cook until tender, about 7-9 minutes.

  7. Top with warm pasta sauce of choice.
