REALLY FAST MEAL. Linguine cooked in Mushrooms, Eggplant & Onion with Lean ground turkey. Very filling!

Recipe Ingredients for Linguini with Mushrooms, Eggplant an Onion

20 oz Fresh Ground Turkey - Lean
6 serving Ralphs Parmesan
4 cup, cubes Eggplant
2 cup, pieces or slices Mushrooms
1 medium (2-1/2" dia) Onions
6 oz Whole Grain Linguine
2 oz Extra Virgin Olive Oil

Recipe Directions for Linguini with Mushrooms, Eggplant an Onion

Put Oil, Turkey, Onions and Mushrooms in large soup pot. On high heat stir fry all veges, turkey an olive oil. Once they are browned pour in the whole jar of Spag Sauce. Fill Jar of spag with water an pour into pot. Bring to boil. Drop in Linguine an cover with lid and bring own fire to medium low. Let cook for about 15 minutes or until the linguine is al dente. Then remove lid and let some of fluids evaporate & Serve!
