An alternative to the usual spaghetti.

Recipe Ingredients for Linguine with Walnuts

1/4 cup olive oil
3 cloves garlic, crushed
1 cup walnuts, finely chopped
1 pinch of salt
13 oz. whole grain spaghetti
4 oz. Pecorino Romano, grated
1 pinch black pepper, freshly ground
2 tbsp parsley, chopped fresh

Recipe Directions for Linguine with Walnuts

  1. Pour the oil into a skillet large enough to hold the pasta. Add the garlic and cook over medium heat, pressing the garlic occasionally with the back of a spoon until it turns deep gold, about 3 to 4 minutes. Remove the garlic from the pan. Stir in the walnuts (very finely chopped, so the pieces will cling to the pasta as it's twirled) and cook until lightly toasted, about 5 minutes.

  2. Cook the pasta over high heat until al dente. Drain, reserving some of the cooking water.

  3. Toss the pasta with the nut sauce and just enough of the cooking water to keep it moist. Add the cheese and a generous grinding of black pepper. Toss well. Add the parsley and serve immediately.
