Recipe Ingredients for Linguine with Roasted Parmesan Cauliflower and Marinara

1/2 lb Pasta Linguine
1/2 head cauliflower
2 cups whole tomatoes
1/2 cup tomato sauce
1/2 tsp sugar
1/3 tsp salt
2 tbsp fresh basil
1 tbsp oregano
1/2 red onion
1 small carrot
5 cloves garlic
4 tbsp parmesan cheese
3 tbsp olive oil

Recipe Directions for Linguine with Roasted Parmesan Cauliflower and Marinara

  1. 1. Finely chop garlic, onions, herbs, carrot

  2. 2. Add to med-hi pan with 2 tbsp olive oil in pot. Sautee until translucent.

  3. 3. Puree can of whole tomatoes. Add to vegetables in pot along with the can of tomato sauce. Add salt, sugar and pepper to taste. Simmer for about 20-30 minutes on low-medium heat.

  4. 4. Meanwhile, separate cauliflower into large florets, place in baking dish. Drizzle with about 1 tbsp olive oil and add salt and pepper to taste. Place in preheated 400F oven.

  5. 5. After about 15 minutes, when cauliflower begins to get tender top with grated parmesan cheese. Return to oven to melt. Remove when melted and golden.

  6. 4. As cauliflower roasts, boil pasta and drain. Place pasta on plate. Top with roasted cauliflower and sauce.

  7. 5. Enjoy.
