Recipe Ingredients for linguine with red peppers, green onions, and pine nuts

2 tbsp olive oil
3 red bell peppers
6 green onions
2/3 cup half and half
1/2 cup white wine
1/4 cup parmesan
1 lb linguine
1/4 cup pine nuts

Recipe Directions for linguine with red peppers, green onions, and pine nuts

  1. Heat oil. Add peppers. Saute about 4 minutes. Add green onions and saute 2 minutes. Transfer to a bowl. Add cream and wine to same skillet and simmer 3 minutes. Mix in cheese and all but one cup vegetable mixture. Simmer 2 minutes. Season with SP.

  2. Cook linguine. Drain, reserving cooking liquid.

  3. Return pasta to pot. Add sauce and toss to coat. Add reserved cooking liquid as needed. Mound pasta on plates. Garnish with reserved vegetables. Sprinkle with pine nuts.
