A filling, but light, pasta dish with a fresh Pesto embracing Spring Veggies and succulent Shrimps, for your mouth.

Recipe Ingredients for Linguine Pesto with Shrimps

1/2 lb Raw Shrimp
1/2 lb Asparagus
1/2 lb Mushrooms
1/2 lb Linguine, Whole Wheat, Dry
1 tsp Worcestershire Sauce
2 tsp Steak Seasoning
1 tbsp Extra Virgin Olive Oil
1 tsp Salt
1/2 tsp Pepper
1 cup Fresh Basil Leaves
1/4 cup Pine Nuts
2 tbsp Parmesan Cheese
1 tbsp water
2 tsp minced Garlic
1 tsp Pam

Recipe Directions for Linguine Pesto with Shrimps

  1. Boil 2 qts of salted water in a large pot.

  2. Peel and Devein the shrimps, cleaning the shitty insides, set aside in ice water filled bowl.

  3. Trim the fibrous ends from the Asparagus and cut into 1? pieces, wash.

  4. Wash and quarter the mushrooms, combine with Asparagus, set aside.

  5. Combine Salt, Pepper, Basil, Pine Nuts, 1 tbsp Parmesan Cheese, Water and Garlic in a Food Processor.

  6. Pulse until smooth, slowing adding the Extra Virgin Olive Oil until well combined, scraping down sides as needed, set aside.

  7. Heat large sauté pan to Medium-High.

  8. Add pasta to Boiling Water.

  9. Spray sauté pan with Pam, add veggies, sauté.

  10. Once the veggies are cooked but still firm, add the Worcestershire Sauce and Steak Seasoning, toss to coat and sauté 1 more minute, remove to a large bowl.

  11. Increase stove to High, Spray sauté pan with Pam, add shrimps, sauté for 2 minutes, add ˝ tbsp butter, cook till just done, combine with Veggies.

  12. Pasta should be ready, Drain and add enough Pesto to coat to your taste, add Shrimps and Veggies.

  13. Plate (1/4 of mixture per serving), top with Parmesan Cheese and eat.
