Linguine with pesto and roasted tomatoes

Recipe Ingredients for Linguine with pesto and roasted cherry tomatoes

1 cup leaves, whole Basil, Fresh
5.3 oz Extra Virgin Olive Oil
1/2 cup Ricotta, Part Skim Milk Cheese
2 serving Garlic Cloves
0.33 cup, halves and whole Cashew Nuts, Dry Roasted
1 box Linguine Dry
12 oz Tomatoes

Recipe Directions for Linguine with pesto and roasted cherry tomatoes

  1. Roast tomatoes at 400 F with a drizzle of EVOO, salt, and a few thinly sliced cloves of garlic for 20 min.

  2. Combine cashews, basil, EVOO, salt, pepper, garlic in food processor. Add ricotta cheese and combine.

  3. Cook linguine according to package directions and drain.

  4. Toss pasta with pesto sauce and top with roasted tomatoes.
