Recipe Ingredients for Linguine with Mushrooms, Spinach and Gorgonzola

8 mushrooms, chopped
2 T. of butter (or spread)
1 T. flour
1 c. milk
3/4 c. Gorgonzola cheese
8 oz. whole wheat pasta (linguine specified in recipe)
4 c. of spinach
1 salt, to taste
1 pepper, to taste

Recipe Directions for Linguine with Mushrooms, Spinach and Gorgonzola

  1. Cook pasta according to directions on package.

  2. In a large sauce pan, melt 1 T. butter and add chopped mushrooms with a pinch of salt. Sauté mushrooms for a few minutes, until tender, remove from pan and set them aside in bowl.

  3. In same pan, melt 1 T. butter and whisk in 1 T. flour. Add milk and whisk together. Bring to a boil and then reduce heat to a simmer for a few minutes to thicken.

  4. Add mushrooms back into pan and whisk together.

  5. Add spinach to pan and whisk together.

  6. Remove from heat and add pasta and cheese. Toss together to coat pasta, salt & pepper to taste and serve hot.
