Recipe Ingredients for linguine with eggplant, zucchini, peppers and onions Pauls,serves 4

8 oz linguine
8 1/2 oz eggplant (1 small)
5 1/2 oz zucchini, (1 medium)
1 large red bell pepper
1 1/2 cups canned ground tomatoes
1 tsp olive oil

Recipe Directions for linguine with eggplant, zucchini, peppers and onions Pauls,serves 4

  1. 1 medium eggplant sliced lengthwise and grilled

  2. 1 medium zucchini, sliced lengthwise and grilled

  3. 1 medium onion sliced

  4. 1 medium red bell pepper, sliced

  5. spray heated cooking pan with canola spray

  6. saute union, bell pepper with 2 cloves garlic, diced finely.

  7. add crushed red pepper to taste

  8. add crushed canned tomatoes and simmer for 20 minutes

  9. add eggplant and zucchini and simmer

  10. add water to sauce and vegetable mixture if sauce gets too thick

  11. boil 2 quarts of water i large pot

  12. add linguine and cook for 7 to 9 inutes until al dente

  13. strain linguine and add to sauce pan. mx and serve from pan
