Recipe Ingredients for Linguine with Crema di Noci

8 oz linguine
1/2 cup nuts
1/2 tsp salt
2 cloves garlic
1/2 cup skim milk
1/4 tsp pepper
1/4 cup pecorino cheese

Recipe Directions for Linguine with Crema di Noci

  1. Preheat oven to 350

  2. Cook pasta according to package directions, omitting salt and fat

  3. While pasta cooks, place nuts in a single layer on a baking sheet. Bake at 350 for 8 minutes or until toasted. Place 1/3 cup nuts, salt and garlic in a food processor; process until nuts are finely ground. Microwave milk at HIGH 1 minute or until hot. Add hot milk to food processor; process until smooth.

  4. Drain pasta, reserving 1/4 cup pasta water. Combine pasta, nut cream, chopped nuts and pepper in a bowl; toss to coast. If necessary, add reserved pasta water, 1 tablespoon at a time, to thin cream. Sprinkle with Romano cheese. Serve immediately.
