Refreshing & Summery Pasta Dish

Recipe Ingredients for Linguine with Crab, Chile & Cilantro

13 1/4 oz whole wheat pasta
1/4 c low-sodium chicken broth
2 cloves garlic, crushed
1 chili pepper, minced
1/2 c bell pepper, red, minced
1 tsp parsley, dried
6 oz surimi (sea legs)
1/4 c cabbage, purple
15 oz chickpeas
1 1/4 tbs cilantro, chopped
6 g lemon peel (zest of 1/2 lemon)
23 g lemon juice (juice of 1/2 lemon)

Recipe Directions for Linguine with Crab, Chile & Cilantro

  1. Cook the pasta.

  2. Saute the garlic, cilantro, parsley and peppers in the broth for a minute or two until mixture is fragrant. Add sea legs and saute until heated through.

  3. Combine drained pasta and crab mixture. Throw in other veggies (see suggestions above). Finish off by adding lemon juice and zest.

  4. Serve warm or cold.
