Light pasta dish with vegetable sauce

Recipe Ingredients for Linguine with carrot and pepper coulis

2 tsp olive oil
1 carrot, grated
1 red pepper, diced
1 clove of garlic, minced
1 spring onion, minced
1 tbsp tomato paste
1/2 cup vegetable broth
1 salt
1 pepper
225 g linguine, cooked

Recipe Directions for Linguine with carrot and pepper coulis

  1. In pan, heat oil over medium heat

  2. Sear carrot, pepper, garlic and spring onion 2 minutes, stirring occasionally

  3. Add tomato paste and vegetable broth

  4. Continue cooking for 8 minutes

  5. Pour vegetables in blender and purée

  6. Pour back into pan

  7. Add salt and pepper to taste

  8. Add linguine, mix well

  9. Warm over low heat, serve
