Recipe Ingredients for Linguine Carbonara

2 small onions, diced
90 g parma ham
300 g linguine
40 g low-fat cheese, grated
10 g coriander, chopped
10 g hot sauce
1 tbsp olive oil
2 large eggs
2 tbsp chives
10 g parsley, chopped

Recipe Directions for Linguine Carbonara

  1. Place the onions in a large, deep non stick pan with 150ml water and bring to the boil. Lower the heat and cook for five minutes. After 5 minutes remove the lid, turn up the heat and cook for another 2-3 minutes. Add the oil, ham and cook for 4 minutes or until browned. Remove heat and keep warm. Meanwhile cook the linguine according to pack instructions and season with pepper.

  2. In a large bowl mix the egg yolks, cheese, herbs and tabasco. Drain the pasta reserving about 50ml of the cooking liquid. Combine the pasta with the sauce and stir in the onion and ham. Season well and serve immediately with a green salad.
