High in fibre and low in fat, a big portion of healthy, satisfying soup. You can substitute other lentils but Lentilles le Puy will not fall apart so well. The object here is to make a thick stew-like soup. Additions to this recipe could be: *Moroccan spices (cinnamon, cumin, turmeric) *Chillies *Lemon juice just before serving.

Recipe Ingredients for Lindy's Peanut & Lentil Vegetable Soup V

1/2 cup red lentils
1 leek, chopped
1 carrot, grated
8 ounces potatoes, unpeeled, cubed
1 onion, diced
1 pint chicken stock
4 tomatoes, chopped
2 teaspoons of peanut butter

Recipe Directions for Lindy's Peanut & Lentil Vegetable Soup V

  1. Put everything except the peanut butter into a large saucepan and bring to the boil. Continue to boil for 3 minutes, then reduce the heat, cover the pan and simmer the soup for 30-50 minutes or until the lentils are falling apart and soup is thicker.

  2. Add peanut butter to further thicken the soup, and season to taste with salt and pepper.
