This soup is spicy and fresh. The consistency is light. A Parisian salad (Costco) and multigrain bread compliment it well.

Recipe Ingredients for Linda's Zupa Toscana

2 large potatoes
1 pound hot Italian sausage
8 cups water
8 tsp bouillon
4 cups chopped kale
1 tbsp Italian seasoning
1 1/2 cups half and half

Recipe Directions for Linda's Zupa Toscana

  1. Wash and slice potatoes about 1/4" disks. Do not peel. Cover in water and cook until just tender.

  2. Meanwhile brown sausage. Drain grease. Rinse well in hot water. Set aside.

  3. Heat remaining water and chicken bouillon to a boil.

  4. Meanwhile rinse, remove spines and chop kale.

  5. Combine potatoes, seasoning and sausage with hot liquid and return to a boil.

  6. Shortly before serving, remove from heat and add chopped kale. Allow kale to wilt (quickly turns bright green). Stir in half and half.

  7. Notes: If reheating, do not bring to a boil--milk products will separate. (That's why you want the soup very hot before you add the half and half.)
