Assorted sauteed vegetables with chili seasonings. Always include corn, squash, (black) beans, and usually include tomatoes.

Recipe Ingredients for Linda's Veggie Chili 1

2 ears of corn, kernels removed
3 oz. summer squash, diced
8 oz. winter squash, diced
1/2 sweet pepper, red, diced
2 tbsp. diced hot peppers, jalapeno
15 1/2 oz. can Black Beans
14 1/2 oz. can tomatoes, diced
2 tbsp. chili powder
1 tbsp. ground cumin

Recipe Directions for Linda's Veggie Chili 1

  1. Saute vegetables, adding them in order of which needs longest cooking first. add beans, tomatoes and seasonings. Simmer 15 minutes.

  2. Serve over rice.
