Easy spanish rice recipe, adapted from cooks.com

Recipe Ingredients for Linda's Spanish rice

1 tbsp olive oil
2 clove garlic, minced
1 lb ground beef
1/2 cup onion, diced
1 cup bell pepper, diced
2 cups canned tomatoes, diced
1 1/2 cups canned kidney beans, rinsed and drained
2 cups rice
1 tsp cayenne pepper
1 tsp cumin
1 1/2 cups low sodium chicken broth
2 cups water, more if needed

Recipe Directions for Linda's Spanish rice

  1. Heat olive oil in a large pot over medium-high heat. Add garlic and saute for about 3 minutes. Add rice and saute until rice starts to brown.

  2. Brown beef in separate skillet. Drain if needed.

  3. Add beef and vegetables to rice, saute for several minutes. Add spices.

  4. Add chicken broth. Add enough water to cover all ingredients. Cover and simmer until rice is cooked, adding water if needed. Add hot sauce or other seasonings as desired.
