Recipe Ingredients for Linda's Green Chili

2 tbs olive oil
1 onion, medium
4 cloves garlic, crushed
20 oz pork
65 oz tomatoes, canned diced
2 c bouillon, beef
2 tbs cornstarch
1 cup jalapenos, chopped

Recipe Directions for Linda's Green Chili

  1. Saute onions and garlic in olive oil until tender, add diced raw pork and cook thoroughly making sure all the meat is well cooked and mixed with onion/garlic. Season with salt.

  2. Bring to a boil 1 can 28oz diced tomatoes, 2 cans 14.5 oz diced tomatoes/jalapenos, 1 12 can pickled jalapenos (with carrots) diced with brine, 2 C bouillon (beef or chicken) 2 tsp cumin and 1 tsp pepper (to taste).

  3. Add cooked pork/onion/garlic mixture and simmer 1/2 hour until the pork is tender.

  4. Remove a cup of broth and add cornstarch to thicken, add back to hot batch of green chili and simmer until thickened.

  5. Hot but amazing!
