Recipe Ingredients for Linda's Easy Red Beans & Rice

3 cups boiled red beans
1/2 cup red pepper
1/2 cup green pepper
2 cloves garlic, minced
2 tsp Smart Balance vegetable oil
2 tbsp white vinegar
1 tbsp dried oregano
1 tbsp onion powder
1/2 tsp salt
1/2 tsp pepper
3 cups white rice

Recipe Directions for Linda's Easy Red Beans & Rice

  1. Cook rice in a rice cooker, keep warm.

  2. Heat oil in a large skillet. Saute peppers and garlic until soft.

  3. Add beans and vinegar, and one cup of water. Add a few dashes of hot sauce (recipe called for Tobasco, but I prefer Frank's).

  4. Bring to a boil, reduce heat, cover and simmer for 5-10 minutes. Add cooked rice, oregano, onion powder, salt, and pepper. Heat through.

  5. Note: The recipe called for sauteing 1 small onion with the peppers and garlic, but I don't like onion pieces so I switched to onion powder. Also the original recipe called for black beans instead of red, but I had red in the cupboard.

  6. Note: If you use dried beans, soak and then boil them until softened before using this recipe. If you use canned, be sure to rinse them very well to get rid of the extra salt.
