A chocolate dessert that has a spike of alcohol and lots of fresh raspberries. You could use a liqueur like Tia Maria or Kahlua or even a triple sec like Cointreau instead. Takes about 10 mins to assemble plus chilling time in the fridge

Recipe Ingredients for Linda's Chocolate Tofu Pudding with Vodka & Raspberries

1/3 cup sugar
1 pound silken tofu
8 ounces chocolate, melted
1 teaspoon vanilla extract
2 tbsp vodka
1 cup raspberries

Recipe Directions for Linda's Chocolate Tofu Pudding with Vodka & Raspberries

  1. In a saucepan dissolve the sugar with 3/4 cup water, then bring to the boil or 1 minute before leaving to cool.

  2. Put everything else except the raspberries into a blender and purée smooth.

  3. Pour into 6 ramekins and chill half a hour. Garnish with the raspberries before serving.
