Quick, fresh, garlicky and delicious!

Recipe Ingredients for Linda's Bean Dip

1 cup navy beans (or other small white bean)
2 cloves garlic
1/2 jalapeno pepper
2 tbsp lemon juice
3 tbsp olive oil
1/4 tsp salt
2 tbsp fresh parsley, chopped
2 tsp sesame seeds, toasted

Recipe Directions for Linda's Bean Dip

  1. Puree all ingredients together, except parsley and sesame seeds.

  2. Put puree in a glass bowl.

  3. Add parsley and seeds and stir to mix well.

  4. Refrigerate for at least 2 hours. The garlic will get stronger the longer you let it sit before serving.

  5. If you prefer a bit more garlicky or a bit tangier or a bit spicier, I have upped the garlic (to 3 cloves), the lemon (by 1/8 tsp) and the jalapeno (one full jalapeno), with great success.

  6. Serve with baby carrots or tortilla chips...or....?
