Recipe Ingredients for Limpa Bread-modified for glycemic/sodium

4 cup Cultured Lowfat Butter Milk
1 tsp Baking Soda
2 cup (8 fl oz) Water
8 tbsp Natural Shortening
2 oz Yeast
8 oz Date Sugar
4 cup Rye Flour, Medium
2 tsp Sea Salt
1.5 tsp Anise Seed
1.5 tsp Caraway Seed
1 cup Molasses, Blackstrap
7 cup Enriched Unbleached White Flour

Recipe Directions for Limpa Bread-modified for glycemic/sodium

  1. Dissolve yeast in cup warm water, adding 1 teaspoon sugar.

  2. Mix sugar, seeds, shortening, salt, molasses and water; bring to a boil.

  3. (Seeds can be smashed first, if desired. Also, seeds can be browned in oven for about 4 minutes.)

  4. Add baking soda to buttermilk, then add above mixture.

  5. Add rye flour; mix. Allow to cool, if necessary. Add yeast and white flour.

  6. Knead. Let rise until double.

  7. Shape into loaves and place in greased tins. Let rise until double.

  8. Bake at 350 for 45-50 minutes.

  9. Yield: 6 loaves.
