Recipe Ingredients for Limo beans soup puree

3 cups lima beans (soaked, peeled, boiled)
10 cups of water
2 potatoes
1 carrot
3 tomatoes
5 tbsp extra virgin olive oil
1 tsp asafetida powder
1 tsp garam masala
1 tsp cardamom
1 red pepper (small)
1 tsp fresh ginger (grated)
1 1/2 tsp salt
1 tsp ground black pepper

Recipe Directions for Limo beans soup puree

  1. Soak beans over night, peel them (sounds strange, but true, i did it when after soaking overnight the peel on the beans was too lose, some of it was already floating in the water).

  2. Boil until soft, put the soup in blender, grind it.

  3. Add chopped potatoes, boil on a low heat, boil until potatoes are cooked.

  4. Fry finely chopped carrots in 3 tbsp of virgin olive oil until soft or golden, then add chopped tomatoes, let them "melt down". Add to the soup.

  5. Heat 2 tbsp of olive oil, sprinkle asafetida powder, put red pepper, ginger, grounded cardamom, garam masala, black pepper,fry for about 30 sec until fragrant or till the ginger and pepper is slightly cooked and pour into a soup. Add salt, serve hot.

  6. P.S. You might need to add some water if it boils down too much, also you can reduce the amount of olive oil.
