A nice Bean Salad full of bell peppers, two types of beans and carrots. Flavoured with Lime and Balsamic Vinegar, and goes good with a salad (Lime and Balsamic are a good dressing) or hot toast. NOTE: Each serving is exactly ONE CUP!

Recipe Ingredients for Limey Blimey Bean Salad

1 1/2 cups red bell peppers, chopped
1 1/2 cups green bell peppers, chopped
1 3/4 cups red kidney beans
1 1/2 cups Beans, Black Turtle Soup, Mature Seeds, Canned
1/2 cups carrots, chopped
1/8 cups green peppers, jalapeno, finely chopped
1/3 cups lime juice
3 tablespoons olive oil
4 tablespoons balsamic vinegar

Recipe Directions for Limey Blimey Bean Salad

  1. Open a small hole in the bean cans. Drain out the liquids inside. Fill the bean cans with fresh cool water, swirl, and drain. Keep doing this until the water drains clear to remove sodium. Open the can and pour the clean, rinsed beans into a bowl.

  2. Chop up the carrots and peppers. For the Jalapeņos, be sure to chop them finely, and include more if you want a spicier taste. Add them to the beans and mix.

  3. Drizzle olive oil onto the beans and toss.

  4. Squeeze limes to obtain the juice, and pour over the beans evenly. Toss a little. Add the Balsamic Vinegar and mix well. Increase or decrease the amounts to your personal taste.

  5. If you wish, add pepper or some herbs. I didn't have much available, but I think parsley would go well.
