Recipe Ingredients for Lime Soup

1 1/3 tbs. avocado oil, divided
221 grams boneless, skinless chicken breast
21 grams jalapeno
1 tsp cumin
738 grams low sodium chicken broth
28 grams baby spinach
4 ounces tomato
54 grams scallions
14 grams cilantro
1/2 tsp sea salt

Recipe Directions for Lime Soup

Heat 1 tsp oil in a large saucepan on medium high. Add chicken, jalapeno, and cumin and cook for 2-3 minutes or until chicken is no longer pink in the center, stirring occasionally. Add broth and bring mixture to a boil over high heat. Remove pan from heat, add spinach, tomato, scallions, cilantro, salt and 1 tbs. oil. Let stand covered 5 minutes, to meld flavors, and continue cooking.
