A lime twist on traditional shrimp scampi. Shrimp, onions, and garlic sauted in buttery oil flavored with lime juice.

Recipe Ingredients for Lime Shrimp Scampi

268 grams limes (4 2" diameter friuts)
4 lbs frozen shrimp
3 medium onions
12 cloves garlic
1 teaspoon butter
2 teaspoons extra virgin olive oil
4 cups cooked brown rice

Recipe Directions for Lime Shrimp Scampi

  1. Slice onions

  2. Chop garlic

  3. Rinse shrimp in warm water until you can seperate out the pieces

  4. Remove and discard the skin, head, and tails from the shrimp

  5. Put the olive oil and butter in a large skillet and warm on medium heat

  6. Add onions, garlic, and shrimp to the warm oil and continue to cook uncovered on medium heat

  7. Roll each lime on the counter

  8. Cut each lime in half

  9. Squeeze the juice of each lime into the skillet
