Lime Quinoa Recipe

Use fresh lime juice so you can put the zest in the recipe too. Good garnished with cilantro.

Recipe Ingredients for Lime Quinoa

1 1/2 cups water
1 cup quinoa, uncooked
4 t olive oil
1/4 cup lime juice
2 cloves garlic
1/2 small onion, chopped
2 cup bell pepper, finely chopped
1 cup corn
1/2 t salt

Recipe Directions for Lime Quinoa

Boil water. Add quinoa. Reduce heat to low and cook for 15 minutes with a lid on the pot until water is fully absorbed. Place quinoa in a large bowl with remaining ingredients and zest from 1 lime. Gently mix well.
