Uses chicken with bones - legs or large drumettes

Recipe Ingredients for Lime Pepper Broiled Chicken

500 g chicken legs
1/4 cup lime juice
1 tbsp olive oil
1 tbsp lime zest
1 tsp pepper
1/2 tsp thyme
1/2 tsp basil
2 cloves garlic, minced

Recipe Directions for Lime Pepper Broiled Chicken

  1. Preheat the broiler in the oven and ensure the racks are 4 - 5" from the broiler.

  2. Remove skin from chicken and place on pan. Put in oven and broil 20 minutes or till lightly browned.

  3. Meanwhile, zest lime and combine marinade ingredients in bowl. Whisk well.

  4. After 20 minutes, remove chicken and brush with marinade. Flip over on pan, and brush other side. Return to broiler, 5 - 15 minutes more till chicken is done and no longer pink.

  5. Serves well with garlic mashed potatoes and broccoli
