Recipe Ingredients for Lime Jello Salad

2 packages lime gelatin (1 3oz package lime jello)
1 1/2 cups crushed pineapple
1/2 cup pineapple juice
1/2 cup reduced fat sour cream
1/2 cup pecans, slightly chopped

Recipe Directions for Lime Jello Salad

Drain can of crushed pineapple; reserve juice. Prepare jello as directed, substituting in 1/2 cup of pineapple juice in for 1/2 cup water. Dissolve mix completely and let sit until partially solidified. Mix in 1/2 cup of sour cream by adding some of the jello mixture to the sour cream and mixing until smooth, then reintroduce that mixture back into the jello. Add crushed pineapple and stir. Sprinkle pecans on top of the jello mixture and refrigerate until solid. Can be served as-is or with whipped cream and maraschino cherries.
