A quick bread, great for breakfast. Don't expect it to taste sweet, but add your own honey or marmelade on top to add sweetness.

Recipe Ingredients for Lime-Honey Bread

5/8 c flour
5/8 c whole-wheat flour
1/4 c corn meal
1 t baking powder
1/4 t nutmeg
1/2 t ground coriander
1/4 t baking soda
1 1/4 tsp lime zest
2/3 c milk
2 tbsp honey
1 1/2 tbsp safflower oil
1 egg

Recipe Directions for Lime-Honey Bread

  1. Mix the dry ingredients in a large bowl (including lime zest).

  2. Mix the liquid ingredients in smaller bowl, then add them to the dry mix.

  3. Stir to combine, then pour into greased bread tin.

  4. Bake at 375F for 40-50 minutes, or until toothpick comes out clean.

  5. I halved the recipe to make the loaf mostly for myself, but if you have more people who will eat it, just double the recipe, but only 1 egg is necessary.
