A healthier version of the traditional chicken salad (and some more flavor!) I love having it in a wrap with Joseph's Whole Wheat Tortilla (70 cal.)

Recipe Ingredients for Lime and Cilantro Chicken Salad

8 oz Chicken, Breast, Meat Only
0.5 cup FAGE Total 0%
3 strip (4" long) Celery
5 large Carrots, Baby
0.5 large Onions
1 lime yields Lime Juice
0.5 tsp Cayenne
1 oz Cilantro
1/4 tsp Onion Salt

Recipe Directions for Lime and Cilantro Chicken Salad

  1. Cut the chicken breasts into small pieces.

  2. Sprinkle on the onion salt, cayenne powder and cilantro.

  3. Place in a pan and add 2/3 of the lime juice.

  4. Cook on high/medium heat (~7/10).

  5. Finely chop the celery, onions and carrots.

  6. Mix the chicken and veggies together with the greek yogurt.

  7. Squeeze in the remaining lime juice and any other desired spices/herbs.
