Tasty chicken slow-cooked in lime juice- perfect to serve with warm tortillas

Recipe Ingredients for Lime Chicken Tacos

1 1/2 cups chicken breast
3 tbsp lime juice
1 tbsp chili powder
1 cup corn, frozen
3 tbsp salsa
1 cup kidney beans
1/2 cup low sodium chicken broth

Recipe Directions for Lime Chicken Tacos

  1. Place chicken in slow-cooker.

  2. Combine lime juice, chicken broth, and chili powder, pour over chicken.

  3. Cover and cook on low for 5-6 hrs or until chicken is tender.

  4. Remove chicken, cool slightly; shred and return to slow-cooker.

  5. Stir in corn, salsa, and beans.

  6. Cover and cook on low for 30 mins.

  7. Serve in tortillas with cheese, lettuce and sour cream if desired.
