Lime Cheesecake Recipe

Not exactly good *for* you, but definitely yummy. Squeeze a little fresh lime juice on top before serving.

Recipe Ingredients for lime cheesecake

5 tbsp unsalted butter
1/4 c sugar
1 1/4 c graham crackers
24 oz neufchatel (softened)
120 g limes (2 limes)
3/4 c sugar
1 tsp vanilla
3 eggs

Recipe Directions for lime cheesecake

  1. For crust, mix sugar and graham cracker crumbs with a little cinnamon, if desired. Melt butter and add to mixture. Press into springform pan and bake at 350 for 6-8 minutes.

  2. You will need 1 1/2 tsp of lime zest, and 1/4 c of lime juice, so get this ready while crust bakes.

  3. Once crust has cooled a bit, mix neufchatel, lime zest and juice, sugar, and vanilla on medium speed until smooth. Add eggs and blend until smooth again.

  4. Pour filling into crust and bake at 350 for approximately 40 min. To test for doneness, jiggle the pan - a 1-2 inch area in the center should be "almost set". (Do not insert a knife, etc, into the center to test for doneness, as this will create a crack in the top of your lovely cheesecake.)

  5. Cool for an hour and refrigerate for at least 3 hours before serving.
