Dry lima beans cooked in chicken or other broth.

Recipe Ingredients for Lima Bean Soup (avalee)

14 cups Lima Beans, Large, Mature Seeds, Cooked, Boiled, Without Salt
2 large carrots, diced
6 stalks celery, chopped
2 large onion, chopped
6 cups chicken broth

Recipe Directions for Lima Bean Soup (avalee)

  1. Rinse one pound dry lima beans and add beans, chopped vegetables and chicken broth to 5-quart crock pot.

  2. Heat on high for one hour.

  3. Reduce heat to low and continue to cook for 8 or more hours, or until beans are tender, adding water to keep beans covered.

  4. For thicker soup, slightly mash some of the beans. For thinner soup, add water. Soup will thicken as it cools.

  5. Reheat in the microwave, adding water as needed to thin soup.
