Recipe Ingredients for Lilygirl's Strawberry Filled Cinnamon Muffins

6 oz vanilla yogurt
3 tablespoons butter
1 large egg
1/2 cup skim milk
1 3/4 cups flour
1/2 cup splenda granular
1 tablespoon baking powder
1 1/2 teaspoons cinnamon
1/8 teaspoon salt
10 teaspoons low sugar strawberry jam
1 1/2 tsp sugar
1/2 teaspoon cinnamon

Recipe Directions for Lilygirl's Strawberry Filled Cinnamon Muffins

  1. Preheat oven to 375F. Spray 10 muffin tins with nonstick cooking spray.

  2. In medium bowl, whisk together yogurt, melted butter, egg and milk. Set aside.

  3. In a large bowl, combine flour, baking powder, cinnamon and salt. Stir; make a welel in the center of dry ingredients and add the liquid ingredients. Using a large spoon or spatula, stir until dry ingredients are just moistened.

  4. Place 1 heaping tablespoon of batter into a muffin cup. Press 1 tsp of jam into the center of the batter. Place another heaping tablespoon of batter to cover the jam, smoothing to the edges. Repeat for all muffin cups.

  5. In a small dish, mix together sugar and cinnamon. Sprinkle over muffins.

  6. Bake for 13-15 minutes or until center springs back when touched. Cool for 5 minutes before removing to a wire rack.
