Recipe Ingredients for Lilygirl's Slow Cooker Pineapple Meatballs

1 large egg
1/2 tsp salt
1/4 tsp pepper
1/2 cup dry bread crumbs
2 tsp chicken bouillon powder
680 g ground chicken
398 ml pineapple chunks, canned with juice
1/3 cup white vinegar
2 tsp ketchup
2 tsp soy sauce
1 tsp chicken bouillon powder
1/3 cup brown sugar
1 cup chopped green pepper
1/3 cup chopped green onions
2/3 cup water
3 tbsp cornstarch

Recipe Directions for Lilygirl's Slow Cooker Pineapple Meatballs

  1. Place first 5 ingredients in bowl and stir well.

  2. Add ground chicken. Mix. Shape into 30 meatballs (1.5"). Arrange on a brolier tray and broil, turning once, until brown (4-5 minutes per side). Place in 3.5qt slow cooker.

  3. Combine next 8 ingredients in a saucepan.

  4. Mix water and cornstarch in a small cup. Add to saucepan. Heat and stir until boiling and thickened. Pour over meatballs.

  5. Cover and cook on low heat for 4-5 hours or high for 2-2.5 hours

  6. 1 serving is 3 meatballs with sauce and veggies.
