Meatloaf seasoned with salsa. Oats add fiber (B+)

Recipe Ingredients for Lilygirl's Salsa Meatloaf

390 g lean ground beef
2/3 cup oats
1/3 cup salsa
1/4 cup salsa
2 egg whites
1/3 cup red pepper, minced
1/4 cup onion
1 clove garlic
1/4 cup salsa

Recipe Directions for Lilygirl's Salsa Meatloaf

  1. Preheat oven to 350. Lightly mist loaf pan with olive oil.

  2. In medium mixing bowl combine oats 1/3 cup salsa and 1/4 cup salsa. Let stand for 3 minutes until oats are soft. Add beef, peppers, onion and garlic. Mix until well combined.

  3. Transfer to prepared pan and spread so that the top is flat. Spread remaining 1/4 cup salsa evenly over the top. Bake for 30 minutes or until the meat is no longer pink in the center. Let sit for 10 minutes. Cut into 8 pieces and serve (2 slices per person).
