Recipe Ingredients for Lilly's Sunshine muffins

3/4 cup oatmeal
1 1/2 cup flour
1/4 cup brown sugar
1 1/2 tsp baking powder
1 tsp cinnamon
1/2 tsp baking soda
1/2 tsp salt
3 egg whites
1 cup mashed banana
1/4 cup orange juice
1/2 cup fat free milk
1/2 tsp grated orange peel
2 tbsp olive oil
1/2 cup dried cranberries
1/2 cup coconut

Recipe Directions for Lilly's Sunshine muffins

  1. Mix dry ingredients together in a bowl set aside.

  2. Combine eggs, banana, milk, peel, juice and oil.

  3. Add dry ingredients to egg mixture, then fold in cranberries and coconut till mixed.

  4. Per heat oven to 400

  5. Line 12 muffin cups or coat with non stick spray

  6. Fill tins using a 1/4 cup for each muffin

  7. Bake for 18 min or till a toothpick comes out clean.
