This has been a big hit when I've had company over for dinner. I've substituted butternut squash for half the carrots, with fantastic results. If you don't have plain yogurt or coconut milk on hand, you can use 3 cups of milk instead.

Recipe Ingredients for Lightly Curried Carrot and Ginger Soup

2 tsp vegetable oil
2 cloves garlic, minced
1 onion, chopped
2 tbsp minced gingerroot
1 tsp ground coriander
1/2 tsp ground cumin
1/4 tsp curry powder
1/4 tsp salt
1/4 tsp pepper
4 cups carrots, thickly sliced
3 cups chicken stock
1 cup skim milk
1 cup plain yogurt, low fat
1 cup light coconut milk
1/4 cup cilantro or parsley

Recipe Directions for Lightly Curried Carrot and Ginger Soup

  1. In a large saucepan, heat oil over medium heat. Cook garlic, onion, ginger, cilantro (or parsley), cumin, curry powder, salt and pepper, stirring occasionally, for about 5 minutes, or until onion is softened.

  2. Stir in carrots. Pour in stock; bring to boil. Reduce heat and simmer, covered, for 30 minutes or until carrots are very soft.

  3. In batches, puree mixture in blender or food processor (or use a hand blender). Return to blender. Whisk in milk, then yogurt, then coconut milk. Reheat until just hot. Stir in salt and pepper to taste.

  4. Ladle into bowls. Sprinkle with cilantro or parsley. A dollop of yogurt in the middle of the bowl can be an elegant touch.

  5. Makes 6 1-cup servings.
