Found this recipe in one of the Souther Living magazines. I have used the recipe for many times and like to share it with others.

Recipe Ingredients for Lighter-Than-Air-Rolls

1/2 oz active dry yeast
1 cup warm water (105 - 115 degrees)
1 cup shortening
1 cup sugar
1 teaspoon salt
1 cup boiling water
2 large eggs
3 1/2 cups all-purpose flour
3 1/2 cups wheat flour

Recipe Directions for Lighter-Than-Air-Rolls

  1. Combine yeast and warm water in a 2-cup liquid measuring cup; let stand 5 minutes.

  2. Place shortening, sugar, and salt in a mixing bowl. Add boiling water, beat at medium speed with an electric mixer until smooth. Add eggs and yeast mixture, beating at low speed until blended; gradually beat in flour. Cover and chill 8 hours.

  3. Shape into 1-inch balls; place 3 balls in each greased muffin cup.

  4. Cover and let rise in a warm place(85 degrees), free of dragts, 45 minutes or until doubled in bulk.

  5. Bake at 400 degrees for 12 minutes or until lightly browned. Yield: 3 dozen
