Recipe Ingredients for Lighter Peanut Chicken Curry

1/3 cup orange marmalade
1/4 cup orange juice
2 tablespoons peanut butter
1 tablespoon Dijon mustard
1 1/2 tsp curry powder
1 tsp olive oil
1/2 tsp salt
1/4 tsp ground red pepper
1/2 tsp minced garlic
1/2 pounds chicken breast
2 cups frozen broccoli
1 cup rice
1/4 tsp salt
2 cup water

Recipe Directions for Lighter Peanut Chicken Curry

  1. In a med. pot boil 2 cups water and salt. Add rice, cover and cook 20 mins. or till cooked.

  2. Combine ingredients marmalade through garlic in a blender. Blend well and set aside.

  3. Spray olive oil cooking spray in a skillet over med-high heat. Saute chicken till cooked, add broccoli cook till soft.

  4. Add marinade to skillet. Stir till combined.

  5. Serve curry over rice.
